The 22-year-old signed a four-year contract with the Sky Blues following the agreement of an undisclosed fee.
6ft3 striker Simms joined Everton as a 16-year-old and while with Everton, Oldham-born Ellis enjoyed three successful loan spells away from Goodison Park as well as featuring prominently initially for their Development side and most recently first-team.
After signing professional terms in 2019, he struck an incredible 32 goals in 21 league matches and was on target 46 times in all competitions in 2018/19 for Everton’s Under 18s.
He top scored for Everton Under-23s in the first half of 2020/21 – netting eight goals in 12 games – and in January 2021 he joined Blackpool, firing in 10 goals in 24 games as the side won promotion to the Championship.
January 2022 saw Simms sign for Hearts on loan where he would score 7 in 21 matches.
Last season Sunderland signed Simms and he netted 7 goals in 17 games for the Sky Blues’ fellow Championship side before being recalled by Everton in January, where he would feature 11 times and score once in the top-flight – a vital late equaliser against Chelsea in March.
